Day 12 - Cauliflower & peas soup
CAULIFLOWER & PEAS SOUP
serves: 2
1/2 small cauliflower
1 cup peas
1 large carrot
1 medium onion
3 cloves garlic
0,5 - 0,7 l vegetarian stock
salt, pepper
other spices to taste (celery, red paprika,...)
1 spoon of olive oil
In a pan heat the oil. Fry onions & garlic, add a sprinkleof water and steam on low heath until the onions turn soft. Add carrots and sautee for another few minutes, then add the rest of the veggies (if your peas are really soft, you can add them at a later time, like 5 - 10 minutes before the soup is done), and the stock soup. Season to taste. Cook for about 15 minutes, until the cauliflower turns soft. Serve.
I added a few teaspoons of powdered wheat sprouts to my soup, for protein intake.
